Protein Pancakes

  • 3/4 cup Birch Bender pancake/waffle mix
  • 2/3 cup almond milk (or milk substitute of your choice)
  • 1 tsp olive oil
  1. Heat a griddle or skillet to medium-high heat.
  2. Combine all ingredients in a bowl.
  3. Using a 1/4 measure, scoop batter onto your lightly greased and heated griddle or skillet.
  4. Cook until bubbles have formed and popped.
  5. Flip pancake to other side and cook an additional minute.
  6. Remove and dress with your favorite toppings. Enjoy!
