PIE CRUST
  • 1 cup graham cracker crumbs
  • 1 tbsp coconut oil
  • 1 tbsp milk
Press into a pie dish and bake at 350 for 8 minutes and allow time to cool.
 
PIE FILLING
  • 1 small (15 oz) can of pumpkin purée
  • 2 eggs
  • 2 scoops of unflavored protein powder
  • 1/2 cup sugar
  • 1/4 cup milk (Any Milk works)
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
Directions

Mix all filling ingredients together in a bowl and pour into cooled graham cracker crust.
Bake at 350 for 25 minutes. Reduce temperature to 300, bake for an additional 20-25 minutes, until butter knife comes out clean at the center. Let cool on a wire rack for about 1 hour before covering and refrigerate until ready to eat.
